Hello from the Farm,

Stay hydrated! Drink before you are thirsty…mix organic grape juice, lemon juice, and water for an electrolyte kick to replace all those costly chemical drinks.  Mix 1 qt water with 4 oz grape juice and a big squirt of lemon juice from the yellow squeeze lemon (organic if you can find it) together and chill.  Drink 1oz for every 2 lbs of body weight for optimum hydration.  Then properly prepared, you can really enjoy the benefits of sun and heat.

 

On a sad note L, we burned on an open fire approximately 8,000 Tomato plants because of late blight.  We are discouraged but will not quit.  You will still receive tomatoes from 2 of our cooperative farms. 

Organic grape/cherry tomatoes from Czajkowski farms and field tomatoes (seconds) from Atlas Farm.  We stand to lose $15,000, a sum that will wipe out our 2nd mortgage payment for this year. 

These types of set-backs are why we are especially needing to have fall, winter, spring and our regular 15 week share programs.  You will be receiving a personal invitation in your share box this week.

The organic corn this week has about 15% with a corn-borer worm at the end.  Please do not discard the corn, just peel and cut off the top tip ½ inch below the worm spot (usually brown and a little rusty like).  The corn is fine to eat and absolutely delicious. 

You are also going to receive a sandwich bag with several small hot peppers called riot with a Hungarian hot wax pepper.  Look at the recipe section for great ideas.  Beautiful radishes for full and single shares…all parts are edible…again, check out the recipe section from last weeks newsletter.

Hungarian Hot Wax Pepper

Preparation, uses, and tips

Hungarian wax peppers have a thin, edible skin so it is unnecessary to peel them before adding to stews and salads as a colorful and spicy element. The seeds and membranes in chile peppers contain most of the capsaicin, the compound that lends them their mouth-searing qualities. Even though Hungarian wax peppers are not very hot, you can reduce the heat further by removing their seeds and veins. Hungarian wax peppers are often used in Hungarian soups and stews but are not usually found in Hungarian goulash, where paprika is the major spice. These peppers are also often pickled.

Buying and Storing Tips

Hungarian wax peppers are available in grocery stores and specialty stores in the produce section. Store in a paper bag in the refrigerator for about a week.

Varieties

The Hungarian wax pepper is a pastel yellow chile pepper also known as the hot yellow pepper or hot wax pepper. The Hungarian wax is closely related to the mild banana pepper. These peppers appear so much alike they cannot usually be distinguished except by taste. The Hungarian wax pepper tapers to a rounded point and averages about 6 inches (15cm) in length and is about 1 1/2 inches (3.8cm) wide.
